Single Beveled Knife Edge – Like many traditional Japanese knives you’ll find in the hands of premier sushi chefs at Michelin Starred restaurants, the knife edge on our Gyuto blade is a single beveled ground in order to give you the most precise and sharp edge.  Our blades are meticulously sharpened to a 15 degree edge on one side only while the other side remains flat.  Unlike most blades with a usual compound beveled edge where each side of the blade is sharpened on both sides resulting in an edge angle of approximately 30 degrees.  Our design gives you an incredibly sharp edge while the flat side of the blade helps separate slices of food being chopped.  With our single bevel blade edge resembling a chisel, our knives will give you clean and precise cuts separating each slice from next due to this design, nothing will stand in your way.
